SCRAMBLED MANUKA SMOKED EGGSServes 2

4-6 eggs
Knob of butter
Cream (optional)
Chives (optional), finely sliced
Sea salt
Cracked pepper

Whisk the eggs in a bowl, add a couple of tablespoons of cream, season with salt and pepper. Mix through a good spoonful of chopped chives and mix to combine.
Using a good heavy based pan and a wooden spoon or rubber spatula. Melt the butter, then add the egg mixture and cook gently over a moderate heat. Move gently, you do not want to mix the hell out of it. Be gentle and do not over cook the eggs! You want the eggs slightly runny, they should be shiny and creamy. Serve on char grilled ciabatta bread and you will be set for the day.
