PEACH COBBLER

Sweet, simple and seriously comforting, this peach cobbler is one of those desserts that never lasts long at the table. Juicy peaches bubble beneath a golden, buttery topping with just a hint of spice. Pretty darn delicious and perfect served warm with cream or ice cream.

Ingredients
Peach filling
8 fresh peaches (1 kg whole), peeled, stones removed and sliced
100g cane sugar (or 80g white 20g brown)
¼ tsp ground cinnamon
⅛ tsp ground nutmeg
1 tsp lemon juice
2 tsp cornflour
Cobbler topping
125 g (1 cup) plain flour
100g cane sugar (100g white)
1 tsp baking powder
½ tsp salt
6 Tbsp (90 g) unsalted butter, chilled and diced
60 mL (¼ cup) boiling water
Cinnamon sugar
3 Tbsp (35g) white sugar
1 tsp ground cinnamon
Method
Preheat oven to 200C (180C fan-forced).
Make filling. Toss peaches with sugars, spices, lemon juice and cornflour. Transfer to a 2-litre baking dish. Bake for 10 minutes.
To make the topping. Combine flour, sugars, baking powder and salt.
Rub in butter until crumbly.
Stir in boiling water to form a soft dough.
To assemble. Randomly place spoonfuls of the topping over the peaches (this gives it the cobble topping).
Mix cinnamon and sugar and sprinkle over.
Bake 25–30 minutes until golden and bubbling.
