BROCCOLINI, TOASTED GARLIC, CHILLI AND LEMON

Local broccolini is in abundance right now. Utterly delicious, tender and full of flavour. This simple and tasty way to cook it brings out its best, with golden garlic, a touch of heat and a bright squeeze of lemon to finish. Perfect as a quick side for almost anything.

Ingredients
200g broccolini (approx)
2 Tbsp olive oil
3 cloves garlic, thinly sliced
Pinch of chilli flakes
Sea salt flakes
Cracked black pepper
Squeeze of fresh lemon juice
Method
Bring a pot of salted water to the boil. Add the broccolini and blanch for 1–2 minutes until just tender and bright green. Drain well.
Heat the olive oil in a large frying pan over medium heat. Add the sliced garlic and cook gently until golden and fragrant.
Sprinkle in the chilli flakes and toss through for a few seconds.
Add the drained broccolini to the pan and toss to coat in the garlicky oil. Season with salt and cracked pepper.
Finish with a good squeeze of lemon juice before serving.
