PIKELETS

I haven’t made pikelets for years!

Such an easy recipe to make and what a lovely way to finish a lovely day.

Makes 12

Ingredients

1 cup flour

1 tsp baking powder

¼ tsp baking soda

¼ cup sugar

1 egg, lightly beaten

¾ cup milk

Butter for greasing pan

Cream and jam for toppings (optional)      

 

Method

Sift flour, baking powder, baking soda together in a mixing bowl.  Add the sugar.

Lightly beat the egg, add the milk and mix together.

Make a well in the centre of the dry ingredients and add the wet ingredients.  Mix gently to combine so you have no lumps. You want a thick batter.

Heat up a skillet or heavy-based frypan over a moderate temperature.  

Using a small knob of butter rub it over the surface and wipe clean with a paper towel.  This will season the pan.

Using a large dessertspoon of batter and holding it over the pan tip it so the pointy part of the spoon is facing directly down to the pan.  Let the batter pour off the spoon and you should get a round pikelet.

Continue cooking until all the batter is done.

When cooling, cover a cooling rack with a clean cloth, folded over.  Place the pikelets in between the cloth so they stay warm and supple.

Pikelets go well with jam and cream or as my dad used to like them with good old fashioned butter.
