OAT AND FRUIT COOKIES

Turn back the clock to the childhood pleasures of comforting home baked cookies. I like to add different dried fruits and even chocolate if i have on hand, just to mix up the cookies.

Either way these are always well received and a family favourite.

Preparation  - 15 minutes

Cooking - 15 minutes

Makes 18

Ingredients

1 cup oats

1 cup flour (or gluten free flour)

½ cup coconut

½ tsp baking soda

½ tsp baking powder

½ tsp salt

125 g butter, softened

½ cup brown sugar

½ cup sugar

1 egg

1 tsp vanilla extract

1 Tbsp milk

1 cup raisins

1 cup dried cranberries

Method

Heat oven 180C

Line 2 baking trays with baking paper.

Combine oats, flour, coconut, baking soda, baking powder and salt.  Set aside.

In a separate bowl, cream together the butter and sugars until light and fluffy. 

Add the egg, vanilla and milk, mix together until well combined.  

Stir in the oat and fruit mixture.

Using a tablespoon size measurement, place the dough well apart on the baking trays.

Bake for 15 minutes or until the edges of the cookies are golden brown.

Remove and let cool before eating.

Store in airtight container for up to 3 days.
